Most of a repository is replaceable. A small part is not. Start by protecting the modules that carry the business logic.

Protect the few modules that carry the business advantage, not the whole repository by default.
Ask an engineering team which part of its codebase would hurt to lose and the answer is rarely the whole repository.
It is the matching engine, the risk model, the pricing logic, or the integration knowledge that took years to earn.
Most teams know this. They still postpone protection because protecting every file feels impossible.
Protecting proprietary code modules starts with knowing which ones they are. Walk the repository with one question: if this file appeared on a competitor's machine tomorrow, would it matter? The valuable list is usually shorter than expected.
Scoring, ranking, pricing, proprietary parsers, domain rules, and hard earned integrations are common candidates. Write the list down before choosing a control.
A narrow start is achievable. Engineers can keep working in the rest of the repository while the components that define the business receive the stronger control.
It also keeps the decision honest. The goal is not to make every line mysterious. It is to keep the part a competitor could not quickly rebuild from becoming an ordinary readable copy.

Access can be controlled for each customer deployment and changed when the relationship changes. It does not recover logic an authorized person has already copied elsewhere.
Start with the modules that would cause the clearest harm if exposed. Decide who approves execution environments and document the reason for each protected component.
It is easier to add a component later than to undo an overly broad first rollout.
